Friday Night Dinner

A parents week is never short of stress,
Many will have been awake before the alarm chime,
Dealing with all kinds of mess,
And of course the demon that is dinner time.

By the time they get to the end of the week,
Every parent just wants to recline,
Ideas for dinners that are winners will be meek,
Come on, come on, think quick its nearly bed time.

Its ok to want to cook something quick with ease,
So lose the guilt and let yourself breathe,
Maybe even attempt to drink a hot beverage (please),
I've an easy dinner recipe up my sleeve. 

My kids aren't easily pleased - I have a fussy eater,
But chicken and chips never goes wrong,
Just coz I used the microwave doesn't make me a cheater,
It just makes dinner easier when you haven't got long.

Here's my recipe for,
A plate of proper soul food,
Its roots are southern to the core,
A taste sure to improve any mood.

Southern Fried Chicken Burgers and Sweet Potato Fritters

Rustlers Southern Fried Chicken Burgers
Fry Light
1 Sweet Potato
2 Carrots
3 Eggs - beaten
Plain flour - 4 tablespoons
Spring Onion - finely chopped
Garlic - 1 tablespoon
Coriander - 1 tablespoon

1. Preheat oven to 220 degrees / fan oven 200 degrees.
2. Grate carrot and sweet potato, squeeze all liquid from the gratings (I did this using kitchen roll to ensure the grated vegetables was a dry as possible).
3. Combine the grated vegetables with the spring onion, garlic and coriander in a bowl.
4. Add the flour and beaten eggs to the bowl, mixing well.
5. Line a baking tray with non stick baking paper, spraying with Fry Light until well coated.
6. Using a spoon mould the mixture into equal sized round patties on the baking paper - you should have around 10 - 12 patties.
7. Spray with Fry Light and cook in the oven for 20 - 25 minutes until fritters are golden and crispy.
8. Once your fritters are cooked and out of the oven, cook your sweetcorn and burgers as directed from the packet.

Et Voila....
